While working on the recipe, Big Spoon Roasters’ looked far and wide for the highest quality, most sustainable ginger in the world. Their search led them to The Ginger People in Viti Levu, Fiji. Using sustainable practices that build soil health, their farming partners rotate their ginger crops with cassava, taro, and other annual crops to maintain the integrity and productivity of the local ecosystem. The ginger is cultivated by small family farms and processed at a facility that provides sustainable jobs for the local community.
